You will need

1 tbsp olive oil
½ onion, finely chopped
1 carrot peeled and chopped
225g lean minced beef
400g tin diced tomatoes (salt reduced) or fresh chopped tomatoes
50g basmati rice
300ml water
½ tsp chicken stock
½ small capsicum, chopped
50g sweetcorn



Place the rice, water and stock in a saucepan and bring to the boil, cover and simmer for 10 minutes. Add the capsicum and the sweetcorn and cook uncovered for a further 7 minutes or until the rice is cooked and all the fluid has been absorbed.

Meanwhile, sauté the onion and carrot in the oil for about 5 minutes. Add the meat and cook until brown. Add the tomatoes and cook over a gentle heat for 10 minutes. Add the rice and cook for 3-4.
